Gazpacho of beet, ginger and blueberries


All you need is 2 small beet roots, 1/2 red onion, 2 cm ginger, 50 gr blueberries, 1,5 tbsp red wine vinegar, 200 ml cold vegetable stock, black pepper and salt.

And a blender and a fridge!
