Vegetarian oyster

Mix the flesh of 1/2 avocado with 1 tsp Greek yoghurt, 1 tsp olive oil, salt and pepper

Crush 1 prawn cracker and mix with equal parts black sesame seeds and pulverised nori

Dip oyster leaves a second in boiling water.

Serve a shown. The avocado crème imitates the structure of oyster, the oyster leaf really tastes like oyster.

Classical French Oeufs Mayonaise

Bring 150ml water to the boil with 50ml vinegar and 100g caster sugar. Add 2 tbsp mustard seeds, softly boil for 20 mins. Cool and reserve in a jam jar

Boil 3 eggs 6 mins, cool, peel and halve.

Serve a shown with mayonaise, slices of radish, pea shoots, the mustard seeds caviar and chervil tops

Season with sea salt and pepper

Créme of raw cashews , green peas and grapes


Pre heat the oven to 190°C

Boil 150g raw cashews in water for 20 mins.

Drain and put in the blender with 2 cloves of garlic and salt and pepper

Slowly add 120 ml water to create a smooth cream

Roast another 50g cashew nuts 5 mins in the hot oven till  golden brown

Warm 120g frozen peas in boiling water, drain and mix with 1 shallot, sliced into thin rings, 2 tbsp red wine vinegar, 2 tbsp olive oil and seasoned with salt and pepper.

Halve 100g white grapes and mix with the peas

Boil 1 egg, 6 mins

Start plating with the cashew cream, spoon the pea salat on top and finish with 1/2 egg, some dill and the roasted cashews

Oven roasted vegetables gazpacho, laurel oil


Pre heat the oven to 65°C

First make some laurel oil: blanche 4g fresh laurel leaves for 50 sec in boiling water, then scoop them into ice water. Dab dry and put in a jam jar with 40 ml grape seed oil. Put in the oven for 1 hour.

Put in the blender for 1 min, then drain through cheesecloth and reserve

Put the oven on 220°

Hack 200g red paprika, halve 350g San Marzano tomatoes and 175g apricots, peel and hack  125g carrots. Mix in a bowl with 2 tbsp olive oil, 2 tsp salt and some black pepper.

Spoon on an oven tray covered with baking paper, keeping well apart because too close together they will be steamed instead of roasted and caramelised

Roast for 30 mins

In the meantime peel and slice a small red onion and marinade the rings in 2 tbsp red wine vinegar and 3 tbsp water

Cool the veggies, then blend them with the onion, the marinade , 10 basil leaves, 3 tbsp olive oil and 1 tsp ground cumin. Add water the reach the desired consistency 

Taste and season with salt if necessary, then keep in the fridge

Serve at room temperature, with raspberries, cubed green paprika and croutons

Finish with drops of the laurel oil (feeds  4)

Whole roasted carrots with pangrattato and chilli honey dressing


True, it doesn't look spectacular, but what a nice mix of flavours to eat, believe me.

Preheat oven to 220°C

Halve 5 fat carrots lengthwise and place on a large baking tray and drizzle with 2 tbs oil. Season to taste and toss to combine. Arrange in a single layer and roast for 35-40 minutes, until carrots are tender and skin is golden and lightly charred.

Meanwhile, to make pangrattato, add remaining 2 tbs oil to a small frypan over medium heat. Add 20g Panko and 1 crushed clove of garlic and cook, stirring frequently, for 4-6 minutes, until golden and crisp. Season, transfer to a large bowl and allow to cool completely.

For the dressing, place 2 tbs olive oil, 1 tbsp runny honey and 1 tbsp apple cider vinegar in a small bowl, season and whisk to combine. Season with salt, pepper and 1/2 tsp chili flakes

To serve spread 200g labneh over the base of 2 plates, top with carrots and drizzle with dressing. 

Scatter with breadcrumb mixture and dill sprigs.

Pasta alla Norma




Slice 1 big aubergine in 2 cm cubes, sprinkle with salt and rest voor 10 mins.

Rinse and dry, then panfry in 3 tbsp olive oil for about 10 mins, till soft and nicely browned.

Take out and reserve

Add another tbsp oil to panfry 1/2 minced onion, 1 tsp caraway seeds and 1 tsp fennel seeds.

After 5 mins add 1 minced cove of garlic and fry another minute before adding 35g tomato paste

After 1 min add 400g tomato cubes from a tin, 1 tbsp balsamic vinegar and the reserved aubergine

Softly boil for 15 mins to thicken the sauce

In the meantime boil 150g orecchiette pasta, 

Mix the pasta into the sauce, with some of the cooking liquid.

After plating sprinkle 40g grated goat's cheese over the pasta and some rucola

Stracciatella, ovendried cherry tomatoes, Parmesan crumble


Pre-heat the oven to 125°C

Cut the top 1/3 from 6 (or more) cherry tomatoes. Season with salt, pepper, sugar and lemon juice.

Put in an oven dish, add 2 tbsp olive oil and thinly slice a clove of garlic, put the slivers between the tomatoes and and dry in de hot oven for 2 hrs.

Take them out to cool and put the oven on 180°C

Use your fingers to mix 15g flour, 15g unsalted butter and 10g grated Parmesan and crumble this dough onto a paper covered oven dish

Bake for about 8 mins till golden brown (check from time to time  to avoid burning) and cool.

Serve as shown, starting with the stracciatella, then the cheese crumble and finally the tomatoes.

Finish with some garlic oil from the tomatoes and a pea shoot.

(PS next time I'll use a wider glass and 5 tomatoes pp)

Tomato tartare, cornichon tapenade


Quarter 400g peeled Roma tomatoes, remove the seeds and cut into small cubes. Mix with 1/2 finely sliced shallot, 25g hacked sweet&sour cornichons, 1/2 tbsp rinsed capers, 1/2 tbsp Dyon mustard, 2 tsp mayonaise, 1/2 tbsp ketchup, 1 tsp Worcester sauce, 1 tsp Tabasco, 3g hacked parsley.

Toast 1/2 tbsp mustard seeds in a dry pan. 

Put 1 tbsp Taggiasche olives in the cutter of your blender with 20g sweet&sour cornichons, 3g parsley and 1 tbsp olive oil. Grind into a nice tapenade and add the toasted mustard seeds

Deep fry 2 sheets of rice paper for 10 sec in 180°C arachide oil

Serve as shown with mustard cress,  pea shoots and the crunchy rice paper

Marinated grilled Romano peppers


Halve 500g Romano peppers (long paprikas) and remove the seeds, Preheat a grill to a high heat and grill the Romano peppers, skin side up for about 10 mins, until the skins are blistered and blackened all over

Cool and remove the blackened skins,  tear the peppers into large strips

Mix 25ml of sherry vinegar25ml of balsamic vinegar150ml of extra virgin olive oil50g of garlic cloves, whole cloves lightly crushed in the skins, 25g of fresh thyme25g of fresh rosemary, whole sprigs

Transfer the peppers to a large bowl and add marinade. Cover the bowl with cling film and leave to marinate for at least 45 minutes

Strain the marinade through a sieve and discard the garlic and herbs. Dress the pepper strips in the strained marinade liquid and set aside until required. Feeds 2.

Crunchy egg and chervil salad


Boil 2 small eggs 4 mins, then cool them under cold water

Whisk 1.2 tsp Dyon mustard and 2 tsp white wine vinegar, then add 2 tbsp olive oil and then 1 tbsp mayonaise. Season with pepper and salt

Make a batter from 50g Tempura flour, a bit of salt and 60-70 ml ice cold fizzy water

Put 50g flour on a plate and 50g Panko on another plate

Heat arachide oil to 180°C

Start plating with the dressing, then add 1/2 minced shallot, a teaspoon capers and chervil

Peel the cold eggs carefully and roll them trough the flour, then cover them with the batter and finally with the Panko, before deep frying them in the hot oil for a minute.

Serve as shown

Stuffed meaty artichoke hearts with Roquefort and pumpkin seeds

For starters fill a pan with 5 cm cold water and add the juice of 1/2 lemon, then trim down 2 big fresh artichokes down to their meaty hearts

She writes: cut off and discard the stem end of the artichoke, cut close to the base so the artichoke can stand up on its own.

Pull off and discard the artichoke leaves, starting with the outer ring and working your way around and in the entire thistle. Most of the leaves will snap off, leaving the meaty bit at their ends still attached to the heart. Don't worry if you end up pulling the whole leaf off.

Keep going. Pull off and discard the artichoke's leaves—as you get to the inner leaves, they are more tender, flexible, and yellow. Grab the tops of the center leaves and pull up to remove them. This will reveal the fuzzy, choke underneath. These leaves are often a bit stiff at the ends and depending on the specific variety, may have lovely purple tips.

Use a spoon to dig in and scrape off the fuzzy (and inedible) choke.

Use a paring knife to cut off and discard any tough, fibrous, dark green parts clinging to the outside of the artichoke heart. Be aggressive. You only want the tender, light flesh of the heart when you're finished.

Now you have a fully trimmed and cleaned artichoke heart. It is ready to cook and eat. To keep the hearts from oxidizing and turning brown rub them first with the other 1/2 lemon, then add them in the pan with lemon water. 

Add salt, bring to the boil and cook for 15 mins

Pre-heat the oven to 200°C

Toast 1/2 slice of white bread.

Beat 1/2 egg and add 65g crumbled Roquefort,1/2 tbsp hacked pumpkin seeds, 1/2 tbsp drained and hacked capers, 1 tbsp hacked parsley, 1 small minced clove of garlic and the crumbs of the toasted bread

Once the artichoke hearts are done, drain and dry them and put the in an oiled oven dish

Spoon the stuffing on them and cover with Panko and 1 tbsp olive oil

Put in the hot oven for 15 mins

Serve as shown with chervil leaves

Jeruzalem artichoke and potato tartare on Delice de Bourgogne crème


Blend during 7 mins 15g leaf celery with 2 tbsp water, 100 ml extra virgine olive oil and 1 tsp salt, pour through a fine sieve and keep the green oil in the fridge

Peel 75g waxy potatoes and cut into 5mm cubes, boil them in salted water for 4 mins and cool

Do the same with 75g Jeruzalem artichokes, panfry them softly in 2 tbsp olive oil for about 8 mins, nice browned on all sides. Set aside to cool.

Spoon 75g Delice de Bourgogne cheese (without the rind), 2 tbsp water and 60g sour cream in the food chopper of your stick blender to make a smooth cream, season with black pepper.

Take the leaves from some sprigs of parsley, chervil, tarragon, mint and dill and mix them with 1/2 tbsp olive oil, 2 tsp white wine vinegar and a pinch of salt

Peel a Granny Smith and cut 75g in 5 mm cubes

Mix the apple, potato and Jeruzalem artichoke cubes with 1,5 tbsp of the celery oil, season with salt and pepper.

Spoon the cheese cream in 2 coupes, add the tartare and finish with the herb salad and a thin cracker. Feeds 2.

Korean veggie pancakes


Start with the batter: 50g flour, 15g rice flour, 8g corn flour and 1/2 tsp baking powder, 1/2 tsp onion powder,1/2 tsp white caster sugar, 1 tsp kurkuma, salt, pepper and 110 ml ice cold water

Finely slice 1/2 carrot, 1/2 leek, 3 spring onions,50g taugé, 1/2 red onion, 50g king oyster mushrooms in long matchsticks

Briefly fry the mushrooms in sesame oil, season with salt and pepper

Use your hands to mix the veggies in a bowl with some of the batter, which should just stick to the vegetables 

Mix 40 ml soy sauce, 1 tbsp honey and the juice of 1/4 lime. Finely mince 1/2 clove of garlic and 1/2 red chili,  add to the sauce and leave for 10 mins

Make a salad from 2 tbsp coriander leaves, 2 tbsp sliced chives, 5 hacked leaves of mint, 1/2 thinly sliced red onion, the juice of 1/4 lime and 1/2 tbsp sesame oil and 1 tbsp black sesame seeds

Flatten 2 heaps of the veggie mix and pan fry them in some olive oil, 3 to 4 mins per side 

Serve as shown. Feeds 2

Artichoke and goat’s cheese frittata with cherry tomatoes


Preheat oven to 200°C. 

Heat oil in a 22cm round non-stick frypan over medium-low heat. Add 3 sliced spring onions , 2 crushed garlic coves and 150g quartered grilled artichoke hearts (in oil, from a jar) and cook, stirring, for 3-4 minutes until onions are softened but not coloured. Remove from pan and cool slightly.

Whisk 6 eggs and 120 ml double cream together in a bowl, then stir in 3 tbsp hacked herbs (dill, chives, parsley, chervil), the zest of a lemon, the artichoke mixture and 60g crumbled soft goat’s cheese. Season. 

Pour mixture into the frypan, top with 200g cherry tomatoes and brush them with oil. 

Place another 200g tomatoes on the vine on a small tray, season and brush with oil.

Bake frittata and tomatoes for 20-25 minutes until edges of the frittata are puffed and cooked and the centre is just set. 

Scatter with 60g goat’s cheese, roasted tomatoes and extra herbs to serve, with crusty bread, olive oil and sea salt

Chinese aubergines and King oysters in XO sauce


Mix 2 tbsp soy sauce, 1 tsp sesame oil, 2 tsp palm sugar, 1 tsp red chili paste and 2 tsp corn starch in a bowl and set aside

Slice 2 Chinese aubergines lengthwise in half, then cut at an angle into 2 cm slices

Heat 2 tablespoons vegetable oil in a wok until very hot and tilt to coat on all sides, fry the aubergine until tender and browned, about 5 mins. Season with salt and pepper, remove from the wok and set aside

Hack 4 King oyster mushrooms in 3 cm pieces and stir fry them, about 5 mins. Remove and set aside

Add 1 more tbsp oil to the wok and add 2 tsp minced garlic and a small red chilli. Stir fry 20-30 secs. Add 1 tbsp XO sauce from a jar and 2 spring onions (cut into 4 cm pieces) and stir fry another minute

Stir in the soys sauce mixture, the aubergines, the mushrooms and a handful Thai basil leaves (which I didn't have, so used normal basil) and heat trough and the sauce slightly thickens.

Serve atop rice and garnish with more basil

'Scallops' XO Sauce Spaghetti


Spaghetti tossed in umami XO sauce and topped with king oyster mushroom “scallops.” A Chinese-Italian fusion pasta dish

As it turns out, the king oyster mushroom (or other oyster mushroom varieties) has fibers arranged very similarly to scallops. Not to mention they have a funky, almost fishy taste. So all you need to do to transform them is cook them like you would cook scallops.

XO Sauce is an iconic Chinese condiment traditionally made from dried seafood such as scallops and other meats such as cured ham. It is known for its intensely rich, umami flavors. 

Trim off the ends and slice 2 large king oyster mushrooms into around 1 cm thick cylinders.

With a sharp knife, gently score one side of each cylinder

In a pan, heat up a tbsp vegetable oil on high heat. Sear each “scallop” with the scored side down first. Flip when the scored side is crispy and golden

Once you flipped all the “scallops,” baste the scallops with chili oil. When both sides are golden-brown, they are ready. Take off the heat and set aside.

Prepare 100g spaghetti according to the directions on its packet. When the pasta is 2 minutes from being done, heat up 1 tbsp XO sauce from a jar (mine is Lee Kum Kee) in another pan.

Add the cooked pasta, a tablespoon of pasta water, and toss to emulsify. 

Serve with the scallops and top everything with thinly sliced spring onion and shredded nori.

Asparagus, broad beans, herbs, pecorino


Peel 2 white asparagus.  Boil 2 tbsp frozen peas 2 mins in salted water 

Boil 20 broad beans 2 mins in salted water, cool and pod them 

Slice the asparagus in 3 parts and briefly panfry them in butter

Serve as shown, with chervil, garden cress, mustard cress, mint and shavings of pecorino.

Season with salt and pepper, finish with some very good olive oil

Mozzarella caprese, aubergine, tomato seeds



Purée a 15g
 bunch of basil , 1 peeled clove of garlic and a pinch of sea salt in 75 ml olive oil

Cut an aubergine in two 1 cm slices, cover with salt and leave for 10 mins, then wipe off the salt.

Brush with oil and panfry the slices in the grillpan, about 5 mins per side

Plate them and cover with slices of Mozzarella. Halve 4 cherry  tomatoes and squeeze out the seeds on the Mozzarella.

Finish with some basil oil and the zest of a lemon

Serve with panfried Turkish bread

Tartare of chanterelles and hazelnuts


Mix 50g soft butter, 1 tbsp white miso, a grated clove of garlic and the zest of 1 orange

Finely hack 300g chanterelles and season with fine salt. Panfry in a DRY pan before adding the miso butter till it foams and covers the mushrooms

Use the mixer to whip 20g soft butter with 1 tbsp sour cream to make it really airy, then add some sea salt and 2 tbsp finely hacked celery leaves.

Panfry  a tbsp hacked hazelnuts and deep fry 10 leaves of celery.

Start plating with the mushrooms, covered with the toasted hazelnuts and the crispy celery leaves.

Serve with bread and the whipped butter

Roasted cauliflower, gochujang sauce in crispy little gem


Pre-heat the oven at 210°C

Mix the florets of 1/4 cauliflower with some olive oil, garlic powder and salt. Roast in the hot oven for 20 mins

In the meantime boil 100g orzo in 9 mins

Softly fry 1/2 tsp grated garlic and 1/2 tsp grated ginger. Add 1/2 tbsp gochujang, 1/2 tsp miso, 1/2 tsp runny honey, 1/2tsp ketjap, 1/2 tbsp sushi vinegar and 1/2 tbsp sesame oil to make the sauce. 

Eventually add a bit of water

Mix the cauliflower with the sauce

Put 1 tbsp orzo on a little gem leaf, followed by some cauliflower, some sliced spring onion and finally some furikake

Repeat this several times to create either appetizers or a starter.
